This Wicklow honey is simply extracted from the beehive frames and passed through a course filter/sieve to remove large particles of wax.

It then get placed in my creaming machine that simply mixes it for 15 minutes and then rests for 60 minutes. This is repeated for 3-5 days depending on the honey until it starts to turn white. At this point it's bottled up and finished setting in the jar.

This particular batch was collected by my bees on the Killruddery Estate and is the 2023 spring honey.
