My heather honey won 2 Gold Stars at the Great Taste food awards in the UK both in 2021 and 2022.

It's 100% Dublin heather honey collected by the bees when I move them up into the Dublin Mountains in late summer.

This is also the heather honey that won GOLD at the Blas Na hEireann Irish Food Awards in Dingle in September 2017.

The judges thought it was so good they also awarded it 'Best in Dublin' too, making me the best food producer in Dublin at the awards.

This honey attracts a higher price as it is far more labour intensive as the honey can not be extracted from the frames. Also the beehives need to be transported to the heather in the mountains in July. The honey in the comb is cut out of the frames and mashed up, it’s then wrapped in hessian cloth and the honey is pressed out of the wax using a very strong press, something similar to a fruit press for making juice.

This honey still contains small particles of beeswax that pass through the hessian cloth.

The honey is then put straight into jars ready for sale. It still contains beeswax particles and pollen as it was only pressed through a coarse cloth.

Research carried out by Saorla Kavanagh from Trinity College Dublin and published in 2018 showed the health benefits of Irish heather honey was as good if not better than Manuka honey from New Zealand. The full report can be found by clicking the orange button below.
